A wild bamboo bloom occurred in Edamalayar valley in summer this year after 5-6 decades. Bamboo “rice” is popular in the diet of many indigenous communities and is rich in vitamins and proteins. The nutritive value of bamboo rice and the ecological rarity of this ancient food make it a real treat!

Store in a cool, dry place. Soak overnight and cook for 20-25 minutes in a pressure cooker (sim). Made into a kheer/ payasam with jaggery or date palm jaggery, bamboo rice tastes divine. Can also be tried as a rice cake and top it with maple syrup or agave syrup.
